Similar to other varieties of squash and pumpkin, buttercups have a sweeter, richer flavor with a denser texture. High in vitamins A and C, calcium and beta carotene, buttercup squash is a nutrient dense addition to a healthy diet. Use as you would squash or pumpkin, pairing with fresh Mediterranean flavors or Eastern spices. Note that the skin is edible and highly nutritious – simply wash well before cooking.
