Thinly sliced, dried cured ham from the San Daniele Del Friuli area in Friuli Venezia Giulia, Italy's most northeastern region. In order to take the name San Daniele, prosciutto ham must first come from pigs raised in northern central Italy and conform to strict traditional production methods. The meat must also be matured in the Alpine winds, giving it its intense and distinctive flavor. Along with Parma, San Daniele ham is among the most prized prosciutto – the former has a slightly nutty flavor, while San Danielle ham is darker in color and sweeter.
