This cheese from St-Cyr-Morin is very similar to
Boursault. It is a wonderful triple cream that is also
found under the name of St. Anthony or Explorer.
Very smooth and creamy, this cheese tastes 
sweet, mild and fine, with a slight nutty flavor. 
Made by hand in small vats, it is made from 
unpasteurized, full-fat cows’ milk and vegetarian 
rennet. Believe it or not, this cheese is ideal for grilling!
